Bruce’s background spans:

- Heading up the 7th Floor restaurant at Tate Modern and First Dates restaurant
- Corporate catering for brands including Sony Music, PlayStation and Pepsi
- Delivering major events such as Royal Ascot, the Grand Designs Live and Live Nation music festivals
